So this is a variation on one of my families traditions….these are amazing frozen when in their sandwich form ( stolen from the giant Tupperware container in the chest freezer…)
The cookie dough probably has more of a cake batter consistency if you add all of the milk called for, I substituted oat milk, and did not have a full cup, so my dough was stiffer and needed to be flattened with wet fingers… if it had been a tiny bit stiffer, I would have rolled it into balls.
½ cup butter
1 cup sugar
Cream together and add
1 egg
1 tsp vanilla
Mix dry together:
½ cup cocoa
½ tsp baking powder
1 ½ tsp baking soda
2 cups flour
Add to sugar egg butter mix, alternating with up to 1 cup milk( I used about ½ cup oat milk)
Drop onto parchment paper lined cookie sheet, flattening with wet fingers/ bottom of a glass, and bake for 7 minutes at 400Degrees F
Cool completely and enjoy or fill with frosting to make sandwiches….
